Here’s a hearty and easy recipe for One-Pot Lasagna Soup that’s full of flavor and perfect for a cozy meal:
Ingredients:
- For the Soup:
- 1 lb ground beef (or ground turkey for a lighter option)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or chicken broth
- 1 tbsp tomato paste
- 2 tsp dried oregano
- 1 tsp dried basil
- 1 tsp red pepper flakes (optional, for a little heat)
- Salt and pepper to taste
- 8 oz broken lasagna noodles (about 4-5 sheets, broken into pieces)
- 2 cups fresh spinach (optional, for added veggies)
- For the Ricotta Topping:
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp chopped fresh parsley (optional)
Instructions:
- Cook the Meat and Vegetables:
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
- Add the ground beef (or turkey) and cook until browned, breaking it up into small pieces with a spoon. This should take about 5-7 minutes.
- Add the diced onion and minced garlic to the pot, cooking until the onion is soft and translucent, about 3-4 minutes.
- Make the Soup Base:
- Stir in the tomato paste, oregano, basil, and red pepper flakes (if using). Cook for 1-2 minutes to toast the spices and bring out their flavors.
- Add the crushed tomatoes, diced tomatoes, and broth to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and simmer for 10-15 minutes to allow the flavors to meld together.
- Add the Noodles:
- Stir in the broken lasagna noodles, and cook for about 10 minutes or until the noodles are tender. If you’re adding spinach, stir it in during the last couple of minutes of cooking.
- Prepare the Ricotta Topping:
- While the soup is cooking, mix together the ricotta, mozzarella, Parmesan, and parsley (if using) in a small bowl. Set aside.
- Serve the Soup:
- Ladle the soup into bowls, and top each serving with a generous spoonful of the ricotta mixture.
- Optionally, sprinkle extra Parmesan or mozzarella on top for extra cheesy goodness.
- Garnish with fresh parsley or basil for a pop of color.
- Enjoy!
- Serve with some crusty bread on the side to soak up the delicious broth!
This One-Pot Lasagna Soup gives you all the comforting flavors of traditional lasagna but in a cozy, easy-to-make soup form. Enjoy!
