  • Corned beef

  • Swiss cheese

  • Sauerkraut

  • Russian or Thousand Island dressing

The challenge for keto eaters is obvious: rye bread alone can contain over 30 grams of carbs per serving. That’s nearly an entire day’s carb allowance for many ketogenic diets.

The solution? Replace the bread with crispy baked cheese that acts as a sturdy, flavorful wrap.

How to Prepare Keto Crispy Reuben Roll-Ups

Step 1: Preheat Your Oven

Set your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.

Step 2: Create the Cheese Wraps

Place the Swiss cheese slices on the parchment-lined sheet, leaving space between them.

For best results:

  • Slightly overlap two slices to form a rectangle.

  • This makes the wrap strong enough to hold the fillings.

Bake for 5–7 minutes, watching carefully.

You want the cheese to:

  • Melt completely

  • Bubble slightly

  • Turn lightly golden at the edges

Important:
