Ingredients

    1 cup (2 sticks / 227 g) unsalted butter

      1 tablespoon garlic, minced

        1 tablespoon dried thyme

          1 teaspoon dried rubbed sage

            1 teaspoon smoked paprika

              2 teaspoons kosher salt

                1 large (12-15 pounds) turkey, thawed

                  6 medium onions, peeled and quartered

                    1 1/2 pounds (22-24 slices) thick-cut bacon

                      1 cup (240 g) chicken broth

                        Instructions

                        1. Begin by preparing the garlic butter and setting it aside. Prepare the turkey by removing the neck and giblets from the cavity. Place half of the quartered onions in the bottom of a roasting pan and the other half inside the turkey’s cavity. Position the turkey, breast side up, on top of the onions in the pan.
                        2. Carefully loosen the skin from the turkey breast without detaching it. Spread a generous amount of the garlic butter mixture underneath the skin. Smooth the skin back into place, then rub the remaining butter over the outside of the skin. Pour the chicken broth into the base of the roasting pan.
                        3. Preheat your oven to 425°F (220°C). Wrap two slices of bacon around each leg and one slice around each wing, tucking the wingtips underneath the bird.
                        4. To create a bacon blanket for the breast, lay 8 slices of bacon side-by-side on a large piece of parchment paper, ensuring they are touching. Fold every other slice of bacon halfway back. Place one full slice of bacon horizontally across the unfolded strips. Unfold the bent slices over this horizontal piece. Now, fold back the other half of the bacon strips and lay a second horizontal slice. Unfold the strips over it to form a woven pattern. Rotate the parchment paper 90 degrees.
                        5. Invert the parchment paper directly over the turkey breast, so the woven bacon lands on top. Carefully remove the parchment and tuck any overhanging bacon ends underneath the bird, trimming if necessary.
                        6. Roast the turkey at 425°F for about 40 minutes, or until the bacon begins to crisp. Then, reduce the oven temperature to 325°F (165°C) and continue roasting for another 2 to 2 ½ hours, basting the turkey every 20-30 minutes. If the bacon browns too quickly, tent the turkey loosely with aluminum foil.
                        7. The turkey is done when a meat thermometer inserted into the thickest part of the thigh (without touching bone) reads 160°F (71°C). Once removed from the oven, let the turkey rest on the counter for 30 minutes before carving.

                          Letting the turkey rest after roasting is crucial for juicy, tender meat. The internal temperature will continue to rise to a safe 165°F (74°C) during this time.
