How to Make Steak Diane

Step 1: Prepare the Steaks

  1. Remove the steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature.
  2. Season both sides of each steak generously with salt and cracked black pepper.

Step 2: Sear the Steaks

  1. Heat the canola oil in a large skillet over medium-high heat until shimmering.
  2. Add the seasoned steaks to the skillet; cook for about 4-5 minutes on each side for medium-rare doneness.
  3. Once cooked to your liking, transfer the steaks to a plate and cover loosely with foil to keep warm.

Step 3: Make the Sauce

  1. In the same skillet used for the steaks, reduce heat to medium and add butter.
  2. Once melted, add sliced shallots and sauté until translucent.
  3. Stir in sliced mushrooms and cook until they are soft.
  4. Pour in beef stock along with apple juice; scrape up any browned bits from the bottom of the skillet as you stir.
  5. Add Dijon mustard and Worcestershire sauce; simmer until reduced by half.
  6. Stir in heavy cream; cook for an additional 2-3 minutes until thickened.

Step 4: Serve Your Dish

  1. Place each steak on plates and generously spoon the creamy sauce over them.
  2. Garnish with fresh parsley for added color and flavor.
  3. Serve immediately with your favorite sides!

How to Perfect Steak Diane

To ensure your Steak Diane turns out perfectly every time, consider these helpful tips.

  • Use Quality Steaks: Choose high-quality filet mignon for tenderness and rich flavor.
  • Let Steaks Rest: Allow steaks to rest at room temperature before cooking for even doneness.
  • Preheat Your Pan: Ensure your pan is hot enough before adding oil; this helps achieve that beautiful sear.
  • Don’t Overcrowd the Pan: Cook the steaks in batches if necessary to prevent steaming instead of searing.
  • Balance Flavors: Adjust the seasoning and acidity in your sauce to create depth; taste as you go!
  • Garnish Thoughtfully: A sprinkle of fresh herbs not only enhances presentation but also adds freshness to each bite.
